Cranberry Ketchup

What you'll need:

  • 3.5 oz. dried cranberries
  • 2 1/2 cups cranberry juice
  • 1 Tbsp sugar
  • 3 cloves
  • 1 cinnamon stick
  • 3 coriander seeds
  • 1/2 bay leaf
  • 10 black peppercorns
  • 1/4 cup red wine vinegar
  • 2 Tbsp tomato paste
  • 2 Tbsp ketchup

Boil dried cranberries with juice. Add spices and let simmer for about 2 hours until cranberries are overcooked and the juice has reduced.

Add vinegar and bring to boil again for 15 minutes. Add tomato paste and ketchup and bring to boil again. Strain through a sieve and serve.
