Cranberry Delight

What You'll Need:

Cranberry Delight
  • 4 cups Cranberries
  • 1-1/2 cups Sugar
  • 3/4 cup Water
  • 1 envelope Plain gelatin
  • 1/4 cup Lemon juice
  • 2 Tbsp Orange juice
  • 1-1/2 cups Whipping cream
  • 3 Tbsp Confectioner's sugar
  • 1 tsp Vanilla extract

In a saucepan, bring cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. Add gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. In a small bowl, whip cream until soft peaks form. Add confectioner's sugar and vanilla; whip until stiff peaks form. Fold into cranberry mixture. CHill until set.

Yield: 8-10 servings.
