Jelled Cranberry Salad

Jelled Cranberry Salad

1/2 pound fresh cranberries (2 cups)

1 orange, cut up, washed, seeds removed

1/2 cup orange juice

1 cup celery, finely chopped

1 cup chopped walnuts

1 pkg (3 oz) cranberry gelatin dessert mix, sugar-free is okay

1 pkg (3 oz) lemon gelatin dessert mix, sugar-free is okay

2 cups water

Grind the orange and cranberries in a food processor or with a hand grinder. Get the bits very fine, but keep a bit of texture. Bring the two cups of water to a boil and stir into the gelatin mixes. Stir until completely dissolved, then stir in everything else. Put into a 2 quart mold and chill until set, overnight if possible.
