Cranberry Delight

Cranberry Delight

4 cups cranberries

1-1/2 cups sugar

3/4 cup water

1 envelope plain gelatin

1/4 cup lemon juice

2 Tbsp orange juice

1-1/2 cups whipping cream

3 Tbsp confectioner's sugar

1 tsp vanilla extract

In a saucepan, bring cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. Add gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. In a small bowl, whip cream until soft peaks form. Add confectioner's sugar and vanilla; whip until stiff peaks form. Fold into cranberry mixture. Chill until set.

Yield: 8-10 servings.
